Edamame Salad

My mom's friend, Jocelyn, developed this recipe and I created the variation.

Notes:
1) Edamame is a type of soy bean. You should be able to find it at most grocery stores in the produce section.
2) There are no particular amounts in this recipe; it's all done to taste.

Ingredients:
Edamame
Mango
Corn
Red onion
Cilantro (very little is needed)
Coconut (optional; see variation)

Directions:
Put edamame in a bowl
Add diced up mango (which is a pain to peel and dice, I know, but it's taste contrasts perfectly with the edamame so it's really the key ingredient.)
Add diced up red onion
Add corn
Mix everything up and finish with a bit of cilantro on top

Variation:
Skip the red onion and cilantro
Add in some shredded coconut

We were out of red onion and cilantro, so this is just with edamame, mango, and corn.

Easy At Work Salad

Hey guys! Aimee here! I copied this straight out of my nutrition guide for this week. This is the salad I am making for lunch each day. (I hope the format looks ok, I literally copied and pasted from my webpage)

So basically I bought some Roman Hearts and I chop up a whole heart and put it into the Tupperware. Then I throw the baked chicken into a snack baggie, some black beans into a mini Tupperware, I crunch up the Melba Toast to make it like croutons, and I cheat a little and used a piece of low fat string cheese as a little extra. Oh, it's not on the list, but I've also been putting fresh broccoli on my salad as well.

For those vegetarians, replace the chicken with tofu or more black beans.

This has been a pretty easy lunch for me to make AND it is very filling. I just toss it all together at my desk at work and munch on it while I do my work. LOVE IT!

Spinach Pomegranate Salad

For a lighter dish choose a fat free or light feta cheese, plain nuts (no need to toast with sugar), and a light dressing - even try just plain balsamic vinegar!

1 bag baby spinach
1/4 red onion, sliced thin
1/2 cup walnuts, chopped
1/2 cup feta cheese, crumbled
1/4 cup alfalfa sprouts (optional)
1 pomegranate, peeled & seeds separated
Balsamic Vinegarette

Mix it up and serve.
